Smoky Poblanos and Cheese Soup was once a favorite of the Culver Academies’ community,  students, faculty, and staff alike.  Alas it disappeared when food service was outsourced. Facing a bumper crop of poblanos, Chad’s has recreated it, reimagined with local ingredients and a little extra farm love, so the community can enjoy it again.

This rich, creamy soup is loaded with melty cheese and just the right hint of heat from locally grown poblanos and bell peppers, flame-roasted over hickory for a deep, smoky flavor. Almost as much a dip as a soup, it’s made for pairing with crusty breads like our rustic baguette or Italian semolina, and it finds a perfect partner in our Burgundian Walnut and Onion Bread for the ultimate dunk.
